Healthy and Easy Back to School Lunch

Help your kids learn to "eat the rainbow" in an easy and convenient way with a Bento Box, a portable container with separate compartments. Eating a rainbow means getting kids to eat their 5 servings of fruits and veggies every day. Thursday, I hosted a back to school event at Whole Foods in Westport where the Healthy Eating Specialist showed the kids how to incorporate all the food groups and various nutrients into a perfect, satisfying lunch that the kids can make themselves. Each nutritient corresponds to a different color that the kids must include in the box, starting with the wrap or sandwich in the bigger compartment. We made a turkey avocado, and mango wrap. Next, in the smaller compartment we made a fruit salad using red grapes, raspberries, black and blueberries - an immunity boosting burst of color. Next we made a "lettuce bundle" using a leaf of Boston lettuce, some peas, carrots, seeds and nuts...but you can choose anything depending on your preference or allergy issues. 
Consider some hummos and carrots, cucumbers and tomatoes. Or strawberries and yogurt...anything works as long as you fit your rainbow into the box. Enjoy and let me know what you come up with!
